Preserved lemons

 

The lemon tree will not stop growing lemons. It is a tree on a mission.

 
 

Lately it’s had so many more lemons than we can use that they are rotting themselves off the tree. No more! These lemons will go on to greater things.

There were so many lemons and all my pockets were so overfilled that my pants kept falling down. They were also falling out and rolling down the hill into the dark winter’s night.

 
 

This was the second batch off the tree.
Yes that is correct this is half of what I took off the tree. (Left a few on there so the tree didn’t feel robbed.)

 
 

There was a lot of this.
Like a lot.
The only liquid in the jars is lemon juice. So you chop the jar lemons, then have to juice enough lemons to cover the other lemons.

 
 

Food safe time. Seal them jars.

 
 

While those are simmering for a while. Time for some Vicar of Dibley and a mysterious citrus drink - very on theme.
- Can’t say I liked this drink. But it did somehow taste like how Christmas feels? Which I did enjoy.
It was a more challenging beverage than I expected. -

And now just wait one month for the salt and lemon juice to do their thing and soften all the lemon skins.
That sounds horrible. I do apologise.

Now I have a month of obsessively checking in on my lemons every day.
So far…they remain…lemons.

Today’s the day!

Chicken tagine. Minus mint because we didn’t have any. And parsley because it’s gross.

 
 

And there it is!
Only a month from tree to tea.
And there’s more than enough left for tea tomorrow night too.
And there’s more than enough preserved lemons to last a long time.
